Whole wheat breadcrumbs 1/4 cup

Egg 1
Garlic, minced 2 cloves

Chicken broth, low-sodium 8 cups
Carrots, peeled and sliced 2
Celery stalks, sliced 2
Onion, diced 1
Spinach, chopped 2 cups
Whole wheat pasta (fusilli or penne) 1 cup
Fresh parsley, for garnish As needed

Instructions
Make the Meatballs: In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper. Use your hands to mix until all the ingredients are well combined. Roll the mixture into small meatballs, about 1 inch in diameter.

Cook the Meatballs: Heat a large pot over medium heat and spray with cooking spray. Add the meatballs to the pot and cook until browned on all sides, about 5-7 minutes. Remove the meatballs from the pot and set aside.

Prepare the Soup Base: In the same pot, add the carrots, celery, and onion. Cook until the vegetables are softened, about 5 minutes. Pour in the chicken broth and bring to a boil.

Add Remaining Ingredients: Once the broth is boiling, add the chopped spinach and whole wheat pasta. Reduce the heat to low and simmer until the pasta is cooked al dente, about 8-10 minutes. Season with salt and pepper to taste.

Combine and Serve: Return the meatballs to the pot and let them heat through for a few minutes. Ladle the soup into bowls and garnish with fresh parsley.
